WELCOME TO YEAST TOWN

 
 

The year was 2019 when I stumbled upon r/breadit and down the rabbit hole I went.  Normal people, in their normal kitchens, make things that look like that?! Have I been under a rock? Or maybe just too spellbound by trash TV (oh, hi there, Jughead) to realize what I could be baking?

After spending time on r/breadit I was drawn to posts with FWSY in the title.  I assumed this was just another acronym I am not hip enough to understand, but after some Googling found Flour Water Salt Yeast by Ken Forkish.  I put it into the Amazon cart where I kept going back to it, asking myself if it is worth the $20, will I actually bake from it, am I even qualified to bake this bread – I mean it did win a James Beard Award!  After a few months of this I finally placed the order, so the book could then be moved around my house going unread.  Finally, in November I told myself I was going to do this!  It took another month for me to order my equipment and I set the date for my first bake – Christmas morning.

With all of this build up I was going on and on and on to my husband, Brandon, the homebrewer.  This year we moved from Texas to Michigan and I became his brew assistant and noticed many similarities in the processes of baking bread and brewing beer.  One night we were talking and it hits me…Yeast Town.  It’s kind of disgusting, silly, and just weird...in another word, perfect.
